Parsnip lovers enjoy them roasted, when they become sweet and chewy on the outside, soft and fluffy in the middle.

450-675g parsnips
salt
3-4tbsp sunflower oil
25gbutter
1 Peel and cut the parsnips into equal pieces, quarters. Cook them for five minutes in boiling water, then drain well immediately and dry off on kitchen paper.
2 Heat the oil and butter in a roasting tin in the oven at 200C/400F/gas Mark 6. When the fat is really hot add the parsnips, turn to coat well and roast for 15-20 minutes turning once. Continue cooking until crisp and golden.
