
24 wonton wrappers
225g peeled prawns, diced
225g lean pork, ground
3 Chinese dry mushrooms, soaked and chopped
25g carrots, shredded
25g water chestnuts, finely chopped
1 spring onion, finely chopped
1.25cm piece fresh ginger, peeled and grated
1tsp salt
2tsp sugar
2tsp light soy sauce
˝tsp sesame oil
1tsp cornflour
1 Mix the prawn, pork, mushrooms, carrots and water chestnuts in a large bowl. Pound this mixture until well blended and firm. Add the seasonings and remaining ingredients and pound again until well mixed, adding 2-3 tbsp. water as necessary.
2 Put two teaspoons of filling in the centre of each wonton wrapper. Hold one in your hand and squeeze the wrapper gently together around the filling into a basket shape.
3 Place in a greased steaming basket and steam with lid on over a high heat for 10 minutes. Serve with Spicy Sichuan Noodles.
