
If you are trying to eat a little more healthily you could amend this recipe - for instance use a little less cheese or a mix of Edam and Parmesan, and use yoghurt instead of cream.
950g potatoes, peeled and cut into chunks
2 large onions, chopped
100-125g mature Cheddar cheese, grated
1tbsp fresh chives, snipped
1 egg
100ml milk
4-5tbsp double or whipping cream
Salt and black pepper
1. Preheat the oven to 200C/400F/Gas Mark 6. Simmer the prepared potatoes and onions in a pan of salted water for 15 minutes. Drain well and stir in one third of the cheese, the seasoning, chives and nutmeg.
2. Beat together the egg, milk and cream and stir into the potato mix. Spoon into the dishes evenly and sprinkle with the remaining cheese.
3. Bake for 20-30 minutes until golden brown and serve with a large bowl of salad or as preferred.
Tip:
To prepare in advance don't cook for quite so long, cool and when ready reheat at 220C/425F/Gas Mark 7 for 10-15 minutes until golden and bubbling.
