Baked Marrow with Mushrooms and Onion recipe

With marrows beginning to be around now, this makes a good economy family meal, more substantial than you would imagine. Serve with rice or couscous for something more filling.

Ingredients



1 marrow, wiped and sliced into 4cm thick rounds
4tbsp olive oil
2 cloves of garlic, crushed
1tbsp chopped fresh parsley
loz butter
2 red onions, peeled and cut into thin wedges
225g mixed mushrooms, e.g. shitake, button, oyster, open cap
110g cashew nuts, roughly chopped
75g fresh wholemeal breadcrumbs
110g finely grated red Leicester cheese
1tbsp chopped fresh tarragon
Salt and freshly ground black pepper

Method



1. Preheat the oven to 400F/200C/Gas Mark 6. Remove the centre seeds from the marrow slices. Mix together the olive oil, chopped garlic and parsley and brush over both sides of each slice.

2. Arrange slices in an ovenproof dish and cook for 15 minutes.

3. Meanwhile, melt the butter in a pan and fry the onion slices and mushrooms until just beginning to soften. Remove from the heat and stir in the nuts, breadcrumbs, cheese, tarragon and seasoning.

4. Pile equal amounts of onion mixture on top of each marrow slice and return to the oven for 15-20 minutes. Serve hot with freshly cooked vegetables or a salad.
