
Sausage lovers can enjoy this supper dish with an easy conscience, or cook enough to share it with friends! Use low fat sausages to keep the fat levels down.
2tsp vegetable oil
2 leeks, finely chopped
1 garlic clove, crushed
200g can chopped tomatoes
1tbsp tomato puree
Pinch of chilli powder
200ml chicken stock
Sea salt and freshly ground black pepper
4 sausages
150g mashed potato and steamed broccoli, to serve
1. Heat the oil in a large saucepan, add the leek and garlic and cook for 5 mins, or until the leeks are beginning to soften. Add the tomatoes, tomato puree, chilli, chicken stock and seasoning to taste.
2. Place the sausages in a casserole dish and pour over the tomato mixture. Cover and cook at 200C/400F/gas Mark 4 for 30 mins. Serve with mashed potato and steamed broccoli.
