
Pizzas are easy for any of the family to make at home, especially if you use a ready-made base.
1 pkt pizza mix or 2 large ready-made pizza bases
1 x 400g jar tomato and basil sauce
2 tsp dried oregano
1 x 390g can artichoke hearts, drained and sliced
2 red onions, roughly sliced
110g sun-dried tomatoes
175g black olives, stoned
4 tbsp olive oil
110g vegetarian mozzarella, grated
Basil leaves, chopped
1. Preheat the oven to 200C/400c/Gas Mark 6.
2. Put the pizza bases onto baking sheets, spread the tomato sauce over the base, sprinkle with oregano, add the artichokes, onions, tomatoes and olives.
3. Drizzle with olive oil, and top with the cheese.
4. Bake in the preheated oven for 12-15 minutes, until golden brown and the vegetables tender, sprinkle with chopped basil.
5. Serve with a mixed salad.
Tip:
Any seasonal vegetables may be used instead of artichokes, try canned pimientos, or asparagus and mange touts for a special treat.
